In 2003, Callen appeared in Dimension Films' Bad Santa, which stars Billy Bob Thornton as a foul-mouthed, ill-tempered, alcoholic mall Santa. Callen's role is relatively small as the Miami Bartender, although he does get to interact and grapple with Thornton.

The movie was acclaimed for its raunchy humor and Thornton's performance, with many critics and fans calling it a wonderful antithesis to the typical Christmas movie.

Old School (2003) - 7.1

Callen's role in Old School isn't particularly big or important, but Old School is undoubtedly one of his more famous works. Callen portrays the Waiter, who is given such lines as "Love, it's a motherf*****, huh?"

Callen was reunited with Old School director Todd Phillips for The Hangover, which scored solid reviews from critics and ended up grossing $467 million at the global box office. This made it the tenth highest-grossing film of 2009. Callen plays Eddie Palermo, the owner, and proprietor of the Best Little Strippers wedding chapel - the chapel in which Stu and Jade are quickly married.

Death Valley (2011) - 7.8

One of Callen's biggest roles is that of Captain Dashell in MTV's Death Valley. Death Valley is a unique mixture of The Office and Cops, with a little bit of The Walking Dead thrown in for good measure.

The show is a mockumentary that follows California's Undead Task Force, which is tasked with containing a mysterious outbreak of vampires, werewolves, and zombies within the San Fernando Valley. Unfortunately, the show was canceled after just one season and twelve episodes.

The Goldbergs (2013-) - 8.1

The series has been going strong since 2013, and on May 21, 2020, ABC renewed the series for an eighth season. After a long and storied career on television, Callen has finally found a sturdy and long-running home.

Warrior (2011) - 8.2

Warrior is arguably the greatest MMA-based movie of all time. It stars Tom Hardy as Tommy Conlon, a mixed martial artist who is trained for a competition by his alcoholic father.

How I Met Your Mother (2005-14) - 8.3

Many modern audiences have known Callen from How I Met Your Mother. He plays Bilson, an employee of Goliath National Bank that pops up in six episodes throughout the show's third and fourth seasons.

He calls Marshall's tie "steak sauce," he interviews Ted for the role of GNB Headquarters architect, and when ordered to cut back on expenditures, he orders Barney and Marshall to fire Ted over his supposedly terrible ideas. He ends up firing Ted himself when Ted adds personal elements to the business' ETR room.

Kingdom (2014-17) - 8.4

Kingdom is a drama that ran on the Audience Network between 2014 and 2017. It stars Frank Grillo as Alvey Kulina, a retired MMA fighter who runs an MMA gym and trains prospective martial artists. Callen portrays a fight promoter named Garo Kassabian.

He is credited for fourteen episodes, although his role spanned all three seasons of the show. It was announced that the show's third season would be it's last, and the finale was aired on August 2, 2017.

Oz (1997-2003) - 8.7

Callen left the comedy business behind to join Oz in 1998. Oz was one of HBO's first great dramas, airing between 1997 and 2003. Some critics (particularly Alan Sepinwall) have credited Oz with revolutionizing cable television and paving the way for grittier HBO dramas like The Sopranos and Deadwood.

Callen portrays Christian inmate and prison representative Jonathan Coushaine throughout the show's second season. He was credited in 7 of the show's 56 episodes.
